Carrot and Corriander

How to prepare

  1. 12 carrots washed, peeled and cubed
  2. 1/2 onion peeled and chopped
  3. 2 teaspoons freshly chopped coriander or 1 teaspoon ground coriander
  4. 1 sprinkle herbs de provence
  5. 1 pinch basil
  6. Sprinkle ground black pepper
  7. 1 vegetable stock cube
  8. 5 pints/2 1/2 litres water
  9. 2 medium potatoes washed, peeled and cubed

 How to cook

  1. Put the prepared carrots and potatoes into a saucepan
  2. Add the onion, herbs, water and stock cube
  3. Cook for 20 minutes or until tender
  4. Remove from heat and blend soup with a blender or liquidiser. If you don't have one of these then pass through a sieve or mash with a potato masher
  5. Serve as a starter with nice crusty bread or as a filling soup on a cold day
  6. This will serve 6 as a main meal or 10 as a starter

Mexican Bean and Tomato Soup

Serves:  4

Preparation Time: 10 minutes

Cooking Time: 25 minutes

How to prepare

  1. 2 teaspoons vegetable oil
  2. 1 garlic clove, crushed
  3. 1 onion, chopped
  4. Pinch dried chilli flakes or powder
  5. 1 x 400g can chopped tomatoes
  6. 850ml vegetable stock
  7. 1 tablespoon tomato puree
  8. 1 x 400g can mixed beans, rinsed and drained
  9. 150g canned or frozen sweetcorn
  10. 1 tablespoon chopped fresh coriander or parsley (optional)
  11. Ground black pepper

How to cook

  1. Heat the oil in a large saucepan and gently cook the garlic and onion for about 3 minutes or until softened. Add the chilli flakes or powder and the tomatoes and bring to the boil
  2. Pour in the stock and add the tomato puree, mixed beans and sweetcorn
  3. Heat and simmer uncovered for about 15-20 minutes
  4. Add the coriander or parsley (if using) to the soup and season with some pepper. Serve at once
  5. Tip - if you're not keen on chilli use mixed dried herbs instead

We have now been awarded our Healthy Schools Status. In December 2007 Mrs Harris, Mrs Mason and two children went to the awards lunch in Ashford to pick up our award and also to give a short presentation about all the "healthy" activities going on at Seabrook.
